Recipe: Vietnamese Coffee Sundaes with Crushed Peanut Brittle

In the Vietnamese culture, strong iced coffee combined with sweet condensed milk is very popular. This ice cream sundae was inspired by these two flavors. The bold flavors mixed with peanut brittle and a pinch of cinnamon adds a great flavor. This recipe can be found at delish.com

  • 1 cup(s) sugar
  • 1 tablespoon(s) sugar
  • 1/2 cup(s) water
  • 1 cup(s) unsalted roasted peanuts
  • 1/2 teaspoon(s) cinnamon
  • 1 teaspoon(s) kosher salt
  • 3/4 cup(s) sweetened condensed milk
  • 2 tablespoon(s) instant coffee mixed with 1 1/2 teaspoons of hot water
  • 1/2 cup(s) heavy cream
  • 2 pint(s) vanilla ice cream

Directions

  1. Lightly grease a baking sheet. In a small saucepan, combine 1 cup of the sugar with the water and bring to a boil. Cook over moderately high heat, undisturbed, until an amber caramel forms, about 12 minutes. Remove the saucepan from the heat and stir in the roasted peanuts, cinnamon, and salt until the peanuts are evenly coated. Scrape the caramel mixture onto the prepared baking sheet and spread in an even layer. Let stand until the brittle is hardened, about 20 minutes.
  2. Break off 4 medium-size pieces of peanut brittle. Place the remaining brittle in a resealable plastic bag and roll with a rolling pin to crush the brittle into small pieces.
  3. In a medium bowl, whisk the sweetened condensed milk with the dissolved instant coffee. In another medium bowl, using an electric mixer, beat the heavy cream with the remaining 1 tablespoon of sugar at high speed until softly whipped.
  4. Scoop the ice cream into 4 bowls and drizzle with the milky coffee. Sprinkle with the crushed peanut brittle and top with a generous dollop of whipped cream. Garnish with the reserved pieces of peanut brittle and serve at once.

Coffee Barbecue Sauce Recipe

Jambo, friends!  As promised, we are posting a recipe for Coffee Barbecue Sauce. We are sure that these warmer temperatures have you all ready to light the grill! This recipe is great for those who love their sauce strong and with a tang. The sauce is a great marinate for your favorite meat including pork, chicken and beef. Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

  • 1/2 cup brewed espresso or strong, dark Cafe Kili coffee
  • 1 cup ketchup
  • 1/2 cup cider vinegar
  • 1/2 cup firmly packed light brown sugar
  • 1 onion, peeled and finely chopped, about 1 cup
  • 2 cloves garlic, peeled and crushed
  • 3 fresh hot chili peppers, such as jalapeno, or hotter if desired, seeded
  • 2 Tablespoons hot dry mustard mixed with 1 tablespoon warm water
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons ground cumin
  • 2 Tablespoons chili powder

Buying Café Kili Coffee Online is Now Easier for Customers

Customers were previously directed to the Facebook fanpage from the website in order to make their purchases. Through the newly-updated online system, customers can now easily purchase their favorite Cafe Kili coffee directly from the website at www.CafeKili.com.

The café’s goal is to make it easier for consumers of great coffee from across the nation to order and try freshly-roasted Cafe Kili African and South American blends. “Updating out current online store is great for our customers. Just this past week, one of our customers who now lives in the Washington, DC area asked about buying Café Kili coffee online.  Now it’s easier for customers to purchase directly from our website and provide them freshly- roasted coffee beans just as if they came into the store,” said Rose Waruinge, Co-owner of Cafe Kili.

Hibiscus Tea to Naturally Lower Blood Pressure

The Today Show recently featured a segment by Dr. Holly Phillips that explained ways to naturally lower blood pressure. They study claimed drinking three cups of Hibiscus Tea a day lowers blood pressure by seven points over six weeks. The tea is high in antioxidants which make blood vessels more relaxes and helps lower blood pressure.

While a 7-point drop in blood pressure might not seem like much, says Diane L. McKay, PhD, of Tufts University in Boston, studies have shown that “even small changes in blood pressure … when maintained over time … will reduce the risk of stroke and heart attack.”

Please note there are many factors that determine blood pressure include family history and eating habits.
